Apple Pie (glass bottle version)

I’m not a pie fan. This makes thanksgiving at other peoples houses somewhat awkward.

“Oh yeah no Turkey for me, thanks… I don’t really eat meat… Yeah actually no green bean casserole (seriously whose bright idea was it to make green beans into a casserole?!?!?), I just like them plain… also actually no gravy, or cranberries (coated in a ridiculous amount of sugar), or ham, or basically anything you just made.”

Yeah it’s terrible. I look like a snob. I know.

Back to the pie situation… I’m just… not that into it. Chocolate is my thing.

However, i saw a recipe ink this lovely book, and had to try it.

Ok fair warning… it’s not 100% plant based. I made it once with coconut cream (BAD MISTAKE) and then after with some grass fed greek yogurt. I highly recommend it. But I think a plant based yogurt would work as well. Just please do NOT use coconut cream.

So as far as this “apple pie” goes… It has the delicious baked apples at the bottom of the glass, a creamy middle, and a yummy granola-y (yes I can make up words) crunch on the top.

So eat a delicious healthful apple pie… ya know.. in a glass bottle.

 

Apple Pie (glass bottle version)

Recipe

*For the spiced GRANOLA

1 TBSP coconut oil

1 TBSP maple syrup

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp cardamom

1/4 tsp ginger

4 TBSP rolled oats

4 TBSP raw sunflower seeds (or pumpkin)

Heat the coconut oil in a frying pan then add the spices. Mix well and add the oats and seeds. Stir and let it toast for about 5 minutes. Then set aside and get ready to sauté the apple.

 

*For the sautéed apple pieces

1 TBSP coconut oil

1 apple (peeled, cored, and chopped)

1/2 tsp ground cinnamon

1/4 tsp ground ginger

Using the same pan, melt the coconut oil and add the rest to the pan to soften the pieces. (about 5 minutes)

 

*For the vanilla yogurt smoothie

1 apple (cored and quartered)

1 1/2 cups full fat plain (greek) yogurt

1/2 tsp ground vanilla or vanilla extract

Put all ingredients into the blender and blend till smooth.

 

Assemble two glasses… basically split everything in half. Put the apples on the bottom, the smoothie in the middle, and then top with the tasty granola!
