Chocolate Banana Vegan Pie

Happy Pi day y’all. Tonight we got invited to a Pi Party. Everyone had to bring a pie for the competition! So naturally I brought a vegan/refined sugar-free pie!

The best thing about this pie is that is takes like no time at all to make. It’s super easy and fool proof. You can eat it at room temperature or frozen!

The pie was a big hit for everyone at the party. I was happy that we left home with an empty pie plate.

Chocolate Banana Vegan Pie

Recipe

CRUST:

2 cups crispy rice cereal

2 TBSP plus 1 TSP coconut nectar

4 TSP cacao powder

2 TBSP coconut oil (melted)

TOPPINGS:

2 Bananas

2 TBSP dark chocolate chips (or raw melted chocolate)

2 TBSP almond butter

2 TBSP sliced almonds

 

Mix the crispy rice cereal, coconut nectar, coconut oil, and cacao powder in a mixing bowl until all the cereal is coated. Place in the freezer for 5-10 minutes.

 

While it’s freezing, chop up the bananas into pieces and melt the chocolate in the microwave with a bit of coconut oil. Take the “crust” out of the freezer and place the bananas, chocolate, almond butter, and sliced almonds.

 

Put back in the freezer if you desire it to be chilled!
