Mediterranean rice and chickpea salad

Once upon a time I made delicious healthful foods and took pictures of them in beautiful, thought out ways.

Now, I still make delicious healthful foods but also have to feed a screaming baby, hold him while I finish my food, wipe off faces and hands, clean up the mess from dinner, get kids ready to bed, and do a million other things I didn’t have time for during the day and there is just NO tIme for anything else!

Life is busy folks. But I just have to share this recipe. Recently I was gifted the most amazing cook book I have ever owned.

Seriously. Every stinking thing I make from it is wonderful, healthful and plant-based. I want every human to have this book.

Take this chickpea salad for instance…


It’s freaking amazing. But also super oniony and garlicy (yup I think i made those words up), so make sure you really like garlic (and also your partner eats this when you eat it).

The book is called “one-dish vegan” by Robin Robertson. Lots of simple recipes, like this chickpea salad, are in here. Then there are the more time consuming recipes (BUT TOTALLY WORTH IT) like seitan gyros!

Shoot. My child is crying because my baby is pulling her hair. Awesome. Make this my friends. And I promise your tastebuds will be pleasantly surprised.

Mediterranean rice and chickpea salad


2 bell peppers ( I used orange and yellow)

1 1/2 TBSP rice vinegar

1 1/2 TBSP freshly squeezed lemon juice

1/2 tsp maple syrup

2 garlic cloves, minced

1 TBSP minced fresh basil

1/4 tsp dried oregano

1/2 tsp salt (or to taste)

1/2 tsp freshly ground black pepper

1 TBSP olive oil

2 1/2 cups cold cooked brown rice

1/2 cup minced celery

1/2 small red onion, minced

1 1/2 cups cooked chickpeas or 1 (15.5 oz) can chickpeas, rinsed and drained

1/2 can olives, chopped

Torn mixed greens, for serving



In a small bowl, whisk together the vinegar, lemon juice, sugar, garlic, basil, oregano, salt and pepper. Whisk the oil in slowly until emulsified and smooth.

In a large bowl, combine the rice, celery, onion, chickpeas, olives, and bell peppers. Add the dressing and toss well to combine. Adjust the seasonings if needed.

Arrange the salad greens on plates, top with the rice mixture and ENJOY!!!
