Raw vegan chocolate cake

Chocolate? Cake? Healthful? Ok the first two sound amazing right? And the third word just… doesn’t really work right?

WRONG! YOU GUYS THIS IS A RAW VEGAN CHOCOLATE CAKE. So yeah… super healthful.

If you don’t know by now, It’s safe to say I’m a bit obsessed with chocolate. We are at my inlaws right now and guess what… they love chocolate too. I married into the perfect family.

This cake is (surprise) super rich. AND filling. So make sure you have people to share it with. Or just eat it for your breakfast.

Raw Vegan Chocolate Cake

Recipe

Frosting:

1/2 cup dates

1/2 cup raisins

3 1/2 tsp cacao powder

1/2 tsp vanilla extract

2 TBSP coconut oil

2 TBSP peanut butter

1/2- 3/4 cup water

 

Cake

1/2 cup walnuts

1/2 cup pecans

1 1/2 cup rolled oats

1 cup dates

3 tsp cacao powder

1/4 tsp cinnamon powder

1/4 cup water

Frosting: Place all the ingredients into a high speed blender and a blend until smooth. Set in the fridge for a few hours to blend the flavors and set.

Cake: Grind the oats and nuts in a high speed blender into flour. Add this and the rest of the ingredients to a food processor and blend. Roll it out on a flat surface and make as many layers as you would like.

Layer the frosting in-between the cake layers. Two, three, four… go crazy. It’s your cake.
