Vegan Carmel Bar
Oh man you guys. I’m not going to lie. I messed up on this recipe. I was trying to make a lara bar but what I really made was this ridiculous carmely (yes it’s a word that I just made up) treat! You guys won’t believe how ridiculously good this tastes.
My daughter has had like three of these bars a day. They are so smooth and creamy it’s amazing. I call them a Vegan Carmel Bar.
I made these three days ago and now they are gone. And it made a whole pans worth! Definitely more economical than buying 15 lara bars.
Also did I mention it just has four ingredients?

Vegan Carmel Bars
2/3 cup cashew nuts
3 cups dates
1/4 cup peanut butter (add a dash of salt if using unsalted peanut butter)
1 TBSP cacao powder
Place the cashews in a vitamix or food processor and grind until it’s a flour like powder. Add the rest of the ingredients and blend or process until all mixed together. Use the tamper with the vitamix so it doesn’t overheat! Enjoy your treat.
