Vegan coconut chocolate
I originally made these to give to friends and family. But they actually didn’t leave my kitchen. Ooops. Maybe next time friends.
This turned out to be my daughters favorite chocolate. And I feel completely fine giving it to her because it’s free of refined sugar. Also she doesn’t judge how ugly looking they turned out. She just pops them into her mouth and smiles.
Ugh. I haven’t posted in like a YEAR! ok more like a month but that is a really long time! This winter weather has me feeling really down. It’s been an average of 0 degrees this past week and that kind of disgusts me.
So that’s why I just have been making a lot of chocolate. Vegan coconut chocolate to be specific. I mean… What else am I supposed to do?
It didn’t turn out as beautiful as I wanted but sure tastes the same when it goes in my mouth!
Vegan Coconut Chocolate
1/4 cup melted coconut oil
3 tbsp raw cacao powder
3 tbsp maple syrup
1/2 cup dates (soaked in water for 10 minutes)
a pinch of sea salt
2 tbsp coconut oil
A little bit of water as needed (no more than 1/3 cup)
Fill mini cup cake liners on the bottom with the liquid chocolate and then place in the freezer for 10 minutes to harden. While you wait, mix the ingredients for the coconut middle in a blender or food processor. Place a bit of filling onto each of the chocolate bottoms and cover the top with chocolate. Place back into the fridge to harden and enjoy your yummy chocolate!
