Chocolate peanut butter eggs
Ok… so Easter was a while ago… I get it… I’m late on posting these marvelous chocolate peanut butter eggs. Sue me.
But I bet you will forgive me because this recipe is SO good. My husband was very skeptical but her tried them like he does with everything I make. He said “Oh my gosh these are like candy!”
Yup. They are. And they don’t have all the crap in them like the factory made stuff.
I know what you are thinking. Why would I make this when I can just go to Target and pick some up? Well… actually you CAN’T get them at Target because it’s not even Easter time anymore. So… HA!
Ok that’s actually not the point… You don’t want the ones from Target because these are sooooo much better for you. Especially if you make your own chocolate coating!

Also I’m completely aware the point of Easter isn’t really about chocolate but remember how it isn’t even Easter anymore? So… just make these ok?
Chocolate Peanut Butter Eggs
2 dates (pitted)
1/2 cup raw almonds
1 cup dry roasted peanuts
1/2 natural peanut butter
1 cup dark chocolate (I used 60%)
Put dates in food processor and process until it’s little bits. Add the almonds and peanuts until it turns into meal. Add the peanut butter and adjust if necessary. Shape the dough into little round eggs shapes. Place them onto a plate with parchment paper. Place in the freezer for about 10 minutes so it’s easier to dip into the chocolate.
While the eggs are setting, melt the chocolate. I like to set it a bowl and set it over a small pot with heated water on the stove. But the microwave works too. Once melted, dip the eggs in the chocolate and let them set in the fridge. Voila! Deliciousness for you to share. (or hide them and eat by yourself… but that is not very french of you to do).
