Coconut Chewy Homemade Granola Bars

You guys. This recipe is so yummy. My friend sent me a link to this recipe from five heart home I just tweaked it a bit. It has no processed sugar (aka my personal enemy) in it making all natural.

Homemade granola bars are SO better than store bought you guys! There is no icky carmel coloring or high fructose corn syrup added. Just pure plant based delicious and nutritious ingredients here.

The coconut oil and peanut butter make it extra chewy and creamy. I used raw honey in this recipe because the health benefits are great! Raw honey still has all the great enzymes in it. If it’s not raw honey, it’s basically just like white table sugar. Your body will process it easier if the honey is in it’s natural raw state.

You need to heat the honey and coconut oil a bit before putting in the pan but you don’t need to bake these guys at all! The recipe works best with a 9X13″ pan but I was staying at a friends house while I made these and she didn’t have one. I just improvised and did a double stack on an 8×8″ pan.

Coconut Chewy Homemade Granola Bars

Recipe

1 cup of peanut butter

1/4 cup of raw honey

1/4 cup of maple syrup

1/2 cup of coconut oil

2 1/2 cups of rolled oats

1 cup shredded unsweetened coconut

1/4 cup of carob chips (optional)

Melt the honey, coconut oil, maple syrup, and peanut butter in a medium pot over low heat, stirring until smooth. Remove from heat and stir in the oats and coconuts. If you want carob swirls in your bars, add the carob chips now. If you want them to look pretty on top add them after you put them in the pan. Place the mixture into your 9 X 13″ pan lined with parchment paper. Store them in your refrigerator and enjoy!
