Yes. I realize I am almost the worst/most inconsistent blogger on the web. But I made brownies so that makes up for it right?
The thing is I’ve been REALLY busy. Like my house looks like a bomb went off. Also we have been eating cereal for the past week every night for dinner. I guess that’s what happens when you are in a play… and you have a toddler to take care of.
It was amazing to be able to perform again. But my life is SO different than it was 3 years ago. The last show I did was that long ago. I know I am still young but man it made me feel old to feel so exhausted.
The thing about eating healthy means you miss out on things like delicious brownies right? WRONG. You guys I just made the most WONDERFUL healthy brownies.
The best part about these babies is that they aren’t full of refined flour or refined sugar like most every other brownie is. But they are still baked to perfection. And NOPE. no beans in here either.
So yeah. I feel pretty good about these healthy brownies. I had some great intentions of sharing them with my friends but…. ooops. My husband and I ate them. Oh well. I am pretty sure I will make them again.
1/2 cup natural peanut butter
2 tbss raw honey
2 tbsp sucanat
1 tsp vanilla extract
1/2 cup unsweetened applesauce
1 flax egg (1 Tbsp ground up flax and 1 Tbsp water mixed together and set)
1/4 cup + 1 tablespoon oat flour (oats that have been ground)
1/4 cup cocoa powder
1/4 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
1/2 cup + a few more vegan chocolate chips (can be grain sweetened if you want)
Pre-heat the oven to 350 and line an 8 x 8 pan with parchment paper.
In a bowl, mix together the peanut butter, honey, vanilla, and sucanat. Beat in the applesauce. Once that is done, mix in your flax egg.
In a different bowl, combine the whole wheat flour, cocoa powder, baking soda, baking powder, and salt. Mix well and then add the wet ingredients and mix until just barely combined. (you don’t want to over stir!)
Fold in 1/2 cup of chocolate chips and transfer the mixture to the pan. Sprinkle a few more chocolate chips on the top and bake for 21 minutes.
