Quinoa Black Bean Bowl
I’m still wishing I had leftovers of this meal. My husband took them to work leaving me with nothing! Rude. Just kidding. I’m always happy when he takes the leftovers to work because it means it was a winning meal!
I used half red quinoa and half white because I can never decide what I like better. The white has more of a subtle taste where the red is a bit of a stronger taste.
This is one of those meals where your toppings are endless! I love stuff like this! You really get to personalize your meal!
First, you put the Quinoa in the bowl. Because what else comes first in a Quinoa Black Bean Bowl?
Then add the beans!
Now add whatever the heck else you want to make this burrito bowl all yours!
Lettuce, avocado, tortilla chips, cashew cream! Load it on baby!
Black Bean Burrito bowl
1 cup of quinoa (cooked with two cups of water)
2 cans of black beans (drained and rinsed)
1/2 medium onion (chopped)
1 clove of garlic (minced)
1/2 cup cilantro (chopped finely)
1/4-1/2 tsp chili powder
Salt (to taste)
1 Tbs olive oil
1/4 cup lemon juice
lettuce, avocado, cashew cream, salsa, whatever else you want on this delicious bowl!
Cook one cup of quinoa in two cups of water.
Meanwhile, chop the onion and sauté it with the garlic in oil. After about 6 minutes, add the beans with a half cup of water and chili powder and salt to taste. Let the beans simmer for about 15 min (or until liquid has evaporated) and then add half of the lime juice and half of the chopped cilantro.
Once the quinoa is done, fluff with a fork and add the rest of the cilantro and lime juice and salt to taste.
Add all the ingredients of your choice and boom! You have yourself an incredible dinner. Enjoy!
