Vegan Vanilla Bean Ice Cream

This vegan vanilla bean ice cream is truly more of a “nice” cream. And it is just so good.

So I have this confession I need to make. Ice cream is kind of a weakness for me. Chocolate is amazing when made plant based but is ice cream?

Can you really make delicious ice cream without animal product? I was a true sceptic but this recipehas made me a believer. Also… the song believer by imagine dragons is just terrific folks. So so great.

OK… back to ice cream. I can now feel very confident with making vegan ice cream and not feel like i’m missing out.

Look at these kids. Do they look like they are missing out on anything? As my almost two year old says… “nope”.

Also… have you ever made vanilla ice cream with cows milk? It’s kind of a hassle! You have to take out egg whites, heat crap up, chill it… blah, blah, blah. Ugh so annoying.

This stuff is a flipping breeze to make. Vegan vanilla bean ice cream for the win!

Vegan Vanilla Bean Ice Cream


1 can coconut milk (13.5 oz)

1 can Coconut cream (13.5 oz)

1/2 cup organic cane sugar

1 vanilla bean

2 tsp vanilla extract

pinch of sea salt

Blend all ingredients together. Pour into your properly chilled ice cream maker canister (I chilled mine the night before), and follow the instructions for your ice cream maker. When it becomes to thick to churn and is a soft serve consistency, pop it into a bread pan and into the freezer for a couple of hours to harden even more. Take it out and let it sit for 5ish minutes before you scoop it out and enjoy!
